Vegan Chicken Marsala


  • 6 chicken style seitan cutlets, pressed thin under a piece of plastic wrap..I used a heavy mug to press
  • 8 ounces crimini or porcini mushrooms, stemmed and halved, or any mix of any mushrooms, sliced
  • 1/2 cup sweet Marsala wine, or any wine, I didn’t have any, so I used a couple splashes of beer 1/2 cup veggie stock
  • olive oil
  • flax seed, and any blend of nuts you wish, I used almonds and pumpkin seeds, ground or chopped up. enough to dredge the seitan cutlets on both sides


flatten cutlets, pound ground flax seeds and nuts in a shallow pan, dredge cutlets in mixture on both sides, put oil in a pan and cook for about 5 minutes on each side, season with salt pepper, garlic, put aside. Cook mushrooms and any other veggies you wish In the pan used to cook the seitan, pour veggie stock in and let cook down and reduce until tender and liquid is thick. Pour veggie and sauce mixture over seitan.

I like to squeeze a whole lemon over this dish, just to give extra flavor..use to your preference
